Read your article in August Big Issue. As a loyal fan of this fruit I
feel obliged to ask if you’ve been introduced to Cumquat Jelly? It’s
aromatic no floaties or peel. Just clear amber jelly. And so much easier
to make than marmalade. The cumquats are covered in water, boiled and
then strained. The liquid and measure for measure of castor sugar is then
cooked using a normal jam making method.
A recipient of one of my pots pronounced it liquid gold.
